  1. Soak cedar planks 30 minutes in water. Preheat grill to medium-high.
  2. Meanwhile, in a medium saucepan whisk together citrus juices and zests, apricot preserves, garlic and soy sauce.
  3. In a small bowl, whisk together cornstarch and water. Slowly stir into marinade and bring to a boil over medium-high heat until mixture starts to thicken. Remove from heat.
  4. Lay salmon skin side down on cedar planks (or well oiled grill) and season with salt and pepper. Brush half of marinade onto tops of salmon and grill 12 - 15 minutes.
  5. Transfer salmon to plates and brush with reserved marinade on top.
