Instructions
  1. Preheat oven to 400°F.
  2. Using a ring mold, cut a circle out of the center of each tortilla and lay out flat on a cookie sheet lined with parchment paper.
  3. Place a second sheet of parchment paper over top of cut tortillas. Then, place a second cookie sheet on top (this will keep the tortillas flat). Bake for 5 minutes until crisp
  4. In a large bowl, combine all ingredients except sliced avocado (reserved for garnish). Stir and season with salt and pepper to taste.
  5. To assemble towers: place one tortilla disk in the center of mold and fill ¼ full with crab mixture. Top with layer of thin sliced avocado. Do not remove mold until the entire tower is formed.
  6. Add a second tortilla disk and repeat adding crab mixture.
  7. Finish tower with one final tortilla disk and gently lift off the mold, tower should stay upright.
