Crispy Salmon in Pan Drippings
Instructions
  1. Season salmon liberally with salt and pepper.
  2. Place bacon fat in a large non-stick sauté pan set over medium-high heat.
  3. Place salmon flesh side down, skin side up and sear 8 to 10 minutes or until nicely browned and crispy.

  5. Allow salmon to rest and garnish with chives, season to taste with salt and pepper as needed.
