Instructions
  1. Preheat oven to 400˚F.
  2. Heat a small sauce pan over medium heat and add shallots, cherries, sweet tea jelly and stock. Bring to a simmer and cook about 8 minutes, or until shallots and cherries begin to soften.
  3. While sauce is cooking, gently rinse salmon under cool water and pat dry with a paper towel.
  4. Rub salmon with sesame oil and five spice chipotle rub. Place on a baking sheet in preheated oven.
  5. Turn heat to low and add lime zest and soy sauce. Simmer gently to incorporate flavors and remove from heat.
  6. Remove salmon from oven and allow to rest 5 minutes before serving.
  7. Pour sauce over salmon and finish with green onions.
  8. Serve with coconut lime jasmine rice if desired.
