Grilled Fennel Rubbed Swordfish with Caper Butter

Instructions
  1. Preheat grill to 350ºF or medium-high.
  2. In a food processor combine butter, capers, lemon zest, and parsley. Blend until smooth then season to taste as needed with salt and pepper. Set aside or refrigerate for later use.
  3. Spray grill well with non-stick spray to ensure fish doesn't stick.
  4. Season both sides of swordfish with salt, pepper and ground fennel. Grill 4 to 5 minutes per side or until internal temperature reads 145ºF to 150ºF.
  5. Place fish on a serving dish and immediately top with a dollop of butter to melt as it rests. Use more butter as needed and season to taste.
