Instructions
  1. Rinse mussels under cold running water and scrub off any remaining dirt. Drain and set aside. Do this right before using, so they stay fresh and alive.
  2. In a large pot with a lid, add chorizo and cook over medium heat until fat has rendered.
  3. Add shallots, garlic, and thyme. Stir-fry until garlic and shallots are translucent and starting to color.
  4. Add mussels and gently stir (be careful not to break shells).
  5. Add beer, cilantro and a generous pinch of brisket rub. Cover and steam until mussels open, about 6 - 8 minutes.
  6. Discard any mussels with broken shells or any that didn't open.
  7. Season to taste with salt and pepper as needed. Serve hot with crackers or crusty bread. Optional: Garnish with green onions for extra color and flavor.
