Pan Seared Cod with Roasted Tomatoes

Instructions
  1. Place a large sauté pan over medium-high heat. Add butter, oil and garlic.
  2. Preheat oven to 400°F.
  3. Season cod with salt and pepper and place in hot pan. Add tomatoes around fish and cook 3 minutes,
  4. Once browned, flip fish and add white wine, basil and parsley. Place in oven for 3 to 5 minutes.
  5. Remove fish from pan and return to stove over high heat. Cook until sauce is thickened and coats the back of a spoon.
  6. Serve fish with sauce and garnish with green onion and a squeeze of lemon juice.
