Instructions
  1. In a food processor, combine mint, lemon juice, Greek yogurt, olive oil, and salt and pepper. Pulse until smooth. Season to taste as needed then chill until ready to use.
  2. Preheat oven to 350ºF.
  3. Place salmon on a sheet pan lined with parchment paper and season liberally with za'atar.
  4. Roast 10 to 15 minutes or until internal temperature reaches 145ºF.
  5. Rest at least 5 minutes then season to taste as needed. Serve with mint yogurt sauce.
