Salmon with Citrus-Tomato Basquaise
  1. In a bowl, combine tomatoes, garlic, salt, serrano pepper, fruit juices, smoked paprika; and olive oil, toss to combine. Refrigerate at least 30 minutes to allow flavors to meld.
  2. Meanwhile, preheat oven to 350ºF. Line a sheet pan with parchment paper.
  3. Season salmon with a liberal amount of salt and pepper and drizzle with a little olive oil as needed.
  4. Place on prepared pan and roast 10 to 12 minutes depending on thickness of fish, or until desired doneness is reached.
  5. To serve, portion out salmon and top with a generous potion of tomato basquaise. Season as needed to taste.
