Salmon with Sugar Snap Peas and Basmati Rice

Instructions
  1. Rinse rice under cool water. Combine with 1 3/4 cups water in a medium saucepan.
  2. Bring to a boil over medium-high heat. Reduce to a simmer, and cover for 10 minutes.
  3. Remove lid and place salmon fillets over rice.
  4. Cover and cook 6 minutes then remove lid again and add snap peas and scallions. Cover and cook 3 more minutes.
  5. Meanwhile, combine honey, soy sauce and ginger in a small bowl.
  6. Remove rice and salmon from heat, drizzle with soy sauce mixture, and serve immediately.
