Instructions
  1. Heat 1 tablespoon olive oil in a large saucepan on medium-high.
  2. Add bell peppers, onions, garlic, thyme, oregano, bay leaf and olives. Cook until onions are translucent, approximately 10 minutes.
  3. Add tomatoes, bring to a simmer, and reduce heat to a low simmer.
  4. In a separate sauté pan heat remaining olive oil on medium.
  5. Add tilapia, shrimp, scallops, salt, pepper and lime juice. Cook 4 minutes.
  6. Pour sauce over seafood, garnish with cilantro, and serve over rice.
