  1. Wash shrimp under cool running water then lay out on a plate and gently pat dry with paper towels. Set aside.
  2. Heat a skillet on medium-high. Add butter and onions. Sauté 6 to 7 minutes until onions start to soften and butter begins to brown.
  3. Add sunflower oil, red pepper flakes, chopped tomatoes and shrimp. Stir and cook 1 minute.
  4. Stir in chipotle garlic salsa and simmer 4 minutes.
  5. Turn off heat. Add salt or pepper to taste and finish with green onions and avocado.
  6. Serve over rice with a squeeze of fresh lime if desired.
