Instructions
  1. Heat a skillet over medium-high heat.
  2. Lightly oil fish and season with salt, pepper and lemon zest.
  3. Place salmon gently in pan skin side up and cook for 4 minutes.
  4. Gently turn fish over and cook for 2 minutes.
  5. Add butter, tomatoes and lemon juice. Reduce heat to low.
  6. Stir and cook another 3 to 5 minutes, depending on thickness of fish. Salmon will begin to turn opaque as it cooks and butter will lightly brown.
  7. Remove salmon from the skillet and gently spoon tomatoes and sauce over fish. Garnish with parsley.
